It's Asparagus Season!
With summer upon us, I can honestly say that nothing tastes better this time of year than fresh asparagus. With this recipe, you will experience one of the greatest flavours of the season!

Lemon Asparagus Pasta Salad with a Dijon Sundried Tomato Dressing
2 cups dry pasta
1 lb asparagus, trimmed, cut into bite sized spears
¼ cup parsley, finely chopped
¼ cup chives or green onion, finely chopped
¼ cup basil, finely chopped
1/3 cup mayo
Zest from 1 lemon
Juice of 2 lemons
2 tbsp SMAK DAB White Wine Herb Mustard
1 clove of garlic, finely grated
½ cup sundried tomatoes, drained and chopped
1 tsp sea salt
Freshly ground black pepper
Cook pasta according to package directions. During the last 3 minutes of cooking time, drop the asparagus in with the pasta. Carefully drain and rinse the pasta and veggies in a colander under cool running water. Drain well and transfer to a large bowl and chill.
In a small bowl, whisk together the mayo, lemon zest, juice, mustard, garlic, sundried tomatoes, salt and fresh ground pepper.
Once chilled, pour the dressing over the pasta salad, add herbs, salt and ground pepper to taste.
