Shaved Brussels Sprout Salad with Apple, Dried Cherries and Walnuts

1 lb Brussels sprouts

1 small apple, cut into quarters and cored 

½ small red onion, peeled

1/3 cup dried cherries (or cranberries)

½ cup chopped walnuts, toasted 

¼ cup Asiago cheese, finely grated (or any other hard cheese)

1 tsp lemon zest

2 tbsp freshly squeezed lemon juice (about 1 lemon)

1 tbsp white wine vinegar

1 clove garlic, finely chopped or grated 

1 tbsp SMAK DAB Honey Horseradish Mustard  

½ tsp SMAK DAB Hot Honey Jalapeno Mustard

2 tsp honey (or maple syrup)

¼ tsp sea salt

¼ tsp ground black pepper

¼ cup extra virgin olive oil

Directions

Trim the ends off the Brussels sprouts and using a sharp knife OR using the thinnest blade on a mandolin slicer (and a no-cut glove) slice each sprout thinly. Slice the apple and red onion in the same manner and combine in a large bowl. To the Brussels sprout mixture, add the dried cherries and chopped walnuts.

For the vinaigrette, combine all the ingredients in a jar with a tight-fighting lid. Shake the dressing well until emulsified. Pour over the Brussels sprout mixture and toss well to coat. Finished with grated cheese. Chill for at least 30 minutes before serving.
