Cover a baking sheet with a piece of parchment. Whisk mustard, olive oil, butter, lemon juice, zest garlic, oregano, parmesan, salt, and black pepper.
Place sweet potato in a large dutch oven and cover with cold water. Bring to a boil, then reduce to medium high and cook until tender.
Preheat oven to 400°F, and line a baking pan with lightly grease foil.
