Garlic Mustard Mashed Sweet Potatoes
5 lbs sweet potatoes, peeled and cut into 1” chunks
2 cloves garlic, grated
2 tablespoons fresh ginger, grated
2/3 cup milk, half-and-half, cream (whatever you have on hand)
6 tablespoons unsalted butter
1/4 cup SMAK DAB Mustard (any flavor will do!)
Sea salt + pepper, to taste
Place sweet potato in a large dutch oven and cover with cold water. Bring to a boil, then reduce to medium high and cook until tender. Drain and put potatoes back into pot.
Add the remaining ingredients to pot and mash potatoes until creamy. Adjust seasoning with salt and pepper.
*You can substitute sweet potatoes for white potatoes if you wish. Omit the ginger.
