Grilled Chicken with Black Olive Dijon Vinaigrette

Let Smak Dab’s mustard magic transform your everyday grilled chicken breasts into something you’ve never thought was possible before. 


4 boneless, skinless chicken breasts

2 tbsp olive or vegetable oil

Sea salt and black pepper

1 tbsp sherry vinegar

1 tsp red wine vinegar or lemon juice

1 tbsp finely chopped shallot

1/2 tsp SMAK DAB Mustard (White Wine, Curry, or Hot Honey Jalapeno) 

1/2 tsp sugar

6 tbsp extra virgin olive oil

2 tbsp finely chopped kalamata olives (or a mixture of olives)

2 tbsp finely chopped parsley


Prepare the grill to 400-475 degrees. Place chicken breasts between 2 pieces of parchment, and using a mallet, flatten to a uniform thickness. Drizzle the breasts with oil, and season well with salt and pepper. Grill for about 6-10 minutes per side, or until cooked through. 

To prepare sauce, combine vinegars, shallot, mustard, and sugar. Whisk well. Add olive oil, olives, and parsley. 

Slice chicken, and drizzle over sauce to serve! 

NOTE: This recipe is also delicious with white fish or grilled lamb.
