Curry Lamb Sliders with Feta

500g    ground lamb (around 1 lb)

2 tsp    curry powder

½ tsp    ground cumin

½ tsp    ground coriander

1 tsp    garlic powder

1 tsp    onion powder

1 tbsp    fresh parsley, finely chopped

1 tbsp    fresh cilantro, finely chopped

1 tsp    sea salt

10 grinds    on a pepper mill

2 tsp    Smak Dab Curry Dijon

1     egg

¼ cup    bread crumbs

In a bowl, gently mix the ground lamb, spices, parsley, cilantro, salt, pepper, mustard, egg, and breadcrumbs. Using a 1/3 measuring cup, portion and shape into 8 patties. Press an indentation into each patty.

Grill patties, covered, over medium high heat for 6-7 minutes on each side, quarter turning halfway. Meanwhile, lightly toast buns on the grill.

8    slider buns, split

1/3 cup    crumbled feta cheese

½ cup  Smak Dab Mayo

¼    red onion, thinly sliced

8    small leaves of butter lettuce

Lay out your toasted buns and slather both sides with mayo. Place the patty on the bottom and top with crumbled feta, red onion, lettuce and the bun top. Serve immediately.

Smak Dab Mayo

1 egg

2 tsp Smak Dab Mustard Hot Honey Jalapeno, White Wine Herb, or Curry Dijon

1/2 tsp sea salt

2 tsp lemon juice or white wine vinegar, plus more to season

1 cup vegetable or canola oil

For a basic mayo, blend together egg, mustard, salt, and lemon juice in a food processor. With the motor running, very slowly drizzle in about a ¼ cup oil. Gradually add in the remaining oil in a slow and steady stream. The mayo should be thick and creamy. Season with salt and more lemon juice if needed.
