Grainy Mustard Herb Sauce

1¼ cups parsley, leaves picked from the stem 

2 cloves garlic

1 tbsp capers (optional, but recommended)

½- 1 jalapeno or serrano pepper (depending on how spicy you like it), cut into chunks  

¼ cup fresh oregano

½ tsp kosher salt

¼ tsp freshly ground black pepper

½ cup olive oil

3 tbsp red wine vinegar

3 tsp SMAK DAB Mustard (White Wine Herb or Curry Dijon) 

In a food processor, add parsley, garlic, capers, jalapeno, oregano, salt and pepper. Pulse until the herbs are chopped and the mixture forms a very rough paste. (You might have to clean the sides with a spatula a couple times) Remove the herb mixture and place in a bowl. Add the olive oil, vinegar and mustard. Taste, and season with additional salt and pepper if needed. Serve with grilled meats and fish or use as a marinade.
