Cashew Ramen Noodle Salad

Cashew Ramen Noodle Salad

1 16oz bag of coleslaw mix or shredded napa or savoy cabbage 

¼ cup cashews, chopped

¼ cup almonds, chopped

4 green onions, chopped

1 tbsp sesame seeds, optional 

2 bags of packaged ramen noodles, crushed to small, bite-sized crumbs (discard the seasoning packets)


½ cup rice vinegar

3 tbsp canola oil

2 tsp sesame oil

2 tbsp soya sauce

2 tbsp melted honey or maple syrup 

1 tbsp SMAK DAB Hot Honey Jalapeno Mustard

1 tsp garlic powder or 1 clove of garlic, finely minced or grated

¼ tsp ground ginger or ½ tsp fresh ginger, finely minced or grated

Freshly ground black pepper 

In a jar with a tight-fitting lid, add the vinegar, oil, soya sauce, honey, mustard, garlic powder, ginger and pepper. Shake well until combined.  

In a large bowl, add the cabbage, nuts, green onion, sesame seeds and ramen noodles. Pour in the dressing and toss well. Serve immediately.
