Bacon, Beer and Mustard Baked Beans

Ingredients

  • 1-1 1/2 cup dry Great Northern white beans, or any other small white bean (OR 2x540mL cans, drained)
  • 6 slices of bacon
  • sliced 1 onion
  • chopped 1/2 cup barbecue sauce 1 cup beer (or apple juice)
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon Smak Dab Beer Chipotle, Canadian Maple, or White Wine Herb Mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon chipotle powder  
  • 1 can pineapple tidbits, drained (reserve liquid)

Directions

  1. If using dry beans, cover with water (2-3 times the volume of beans) and let soak overnight. Drain, and cover with fresh water. Cook for one hour, or until al dente but still tender.
  2. Preheat oven to 325F. In a large ovenproof pot, cook bacon and onion on medium high heat until the onions are soft and the bacon is rendered. Add beans and remaining ingredients, stir to combine well. Lid and bake in the oven for about 2 1/2 hours until thick and saucy, stirring twice. Add addition liquid (reserved pineapple liquid) or more beer if it starts to look dry.

Note: This recipe can be done in a crock pot!
