BBQ Teriyaki Pork Sliders with Sweet Pineapple Salsa

Ingredients

Teriyaki Sauce

  • 3 tbsp Smak Dab Mustard Canadian Maple or Beer Chipotle
  • 2 tbsp soya sauce
  • 1 tbsp grated fresh ginger
  • 2 tbsp maple syrup

Pineapple Salsa

  • 2 cups fresh pineapple, cut into 2" chunks 
  • 1/2 sweet white onion, finely diced
  • 1 jalapeño, seeds removed, finely diced
  • 1/4 cup cilantro, finely chopped
  • 2 limes, juiced
  • 1/2 tsp sea salt
  • 1 tsp honey

Smak Dab Mayo

  • 1 egg 
  • 2 tsp Smak Dab Mustard Hot Honey Jalapeño, White Wine Herb, or Curry Dijon
  • 1/2 tsp sea salt
  • 2 tsp lemon juice or white wine vinegar, plus more to season
  • 1 cup vegetable or canola oil

Teriyaki Sliders

  • 500g lean ground pork (around 1lb)
  • 2 tbsp green onion
  • 2 tsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 10 grinds on a pepper mill
  • 1 egg
  • 1/4 bread crumbs
  • 8 slices of havarti cheese

Assembly

  • 8 slider buns, split
  • 1/4 Smak Dab Mayo Recipe
  • 1/4 cup Smak Dab Mustard Canadian Maple
  • Teriyaki Sauce Recipe
  • Pineapple Salsa Recipe

Directions

Teriyaki Sauce

  1. Combine ingredients and place in a microwave-safe dish. Microwave with lid on medium high for 1 ½ minutes, until the sauce is reduced and thick. Set aside to cool.

Pineapple Salsa 

  1. Grill the pineapple chunks on medium high heat for 2 minutes on each side, or until the pieces have distinct grill marks. Allow to cool, then cut the chunks into bite-sized pieces and place in a bowl. Add the onion, jalapeño, cilantro, lime juice, salt, and honey. Mix well and chill.

Smak Dab Mayo 

  1. For a basic mayo, blend together egg, mustard, salt, and lemon juice in a food processor. With the motor running, very slowly drizzle in about a ¼ cup oil. Gradually add in the remaining oil in a slow and steady stream. The mayo should be thick and creamy. Season with salt and more lemon juice if needed.

Teriyaki Sliders

  1. In a bowl, gently mix the ground pork, green onion, soy sauce, garlic, onion, salt, pepper, egg and breadcrumbs. Using a 1/3 measuring cup, portion and shape into 8 patties. Press an indentation into each patty. 
  2. Grill patties, covered, over medium high heat for 6-7 minutes on each side, quarter turning halfway. Meanwhile, lightly toast buns on the grill. Generously glaze the top of the patty with the teriyaki sauce and top with cheese during the last 1 minute of cooking time.

Assembly

Lay out your toasted buns and slather the tops with mayo and the bottoms with mustard. Place the patty on the bottom and add a spoonful of pineapple salsa. Place the bun top on and serve immediately.
