Directions
In a large skillet over medium-high heat, add olive oil and cook ground chicken. Break up into bite sized pieces using a spatula. Cook until no longer pink and all the liquid has cooked off; about 7-10 minutes.
Meanwhile, in a small bowl combine garlic, ginger, soy sauce, honey, mustard, rice vinegar, sesame oil and sriracha. Pour mixture into the skillet and stir together on medium low heat for 3-4 minutes, until the sauce reduces to a consistency that coats the meat. Allow to cool slightly then fold in the chopped cashews.
Spoon chicken into the lettuce cups and garnish with sliced green onions and sesame seeds.
