Spicy Cashew Chicken Lettuce Wraps

Ingredients

  • 1lb (16 oz.) ground chicken or ground turkey
  • 2 tsp olive oil
  • 5 large garlic cloves, minced
  • 1” ginger, peeled and finely chopped
  • 1/3 cup soy sauce
  • 1/3 cup honey or maple syrup
  • 2 tbsp Smak Dab Hot Honey Jalapeño Mustard
  • 3 tsp rice vinegar
  • ½ tsp sesame oil
  • 3 tsp sriracha or garlic chili sauce
  • 1/3 cup cashews, roughly chopped
  • 1 bunch green onions, finely sliced
  • 1 head green lettuce or butter lettuce, washed and dried
  • Sesame seeds, to garnish

Directions

  1. In a large skillet over medium-high heat, add olive oil and cook ground chicken. Break up into bite sized pieces using a spatula. Cook until no longer pink and all the liquid has cooked off; about 7-10 minutes. 
  2. Meanwhile, in a small bowl combine garlic, ginger, soy sauce, honey, mustard, rice vinegar, sesame oil and sriracha. Pour mixture into the skillet and stir together on medium low heat for 3-4 minutes, until the sauce reduces to a consistency that coats the meat. Allow to cool slightly then fold in the chopped cashews. 
  3. Spoon chicken into the lettuce cups and garnish with sliced green onions and sesame seeds.
